The distinction between gourmet and TK vanilla lies mainly in the percentage of drying and the concentration of vanillin. Gourmet vanilla beans undergo a drying process of up to 33%, while TK vanilla beans are dried to 28%. Although derived from the same planifolia bean variety, the additional degree of drying on gourmet beans not only modifies their categorization, but also their vanillin content. Indeed, the more a pod is dried, the more its vanillin content intensifies, which has a direct impact on vanilla aroma and quality.

Vanilla used for the production of liquid extracts is called “extract vanilla beans”. There are two main varieties: US extraction vanilla, which contains 20% moisture and is the preferred variety on the American market due to its fine, reddish, rigid pods; and EU extraction vanilla, which contains 25% moisture and is preferred on the European market, characterized by pods that are also fine and reddish, but more flexible. The reddish color of the pods is the result of the drying process and exposure to sunlight. Whatever the variety, the vanilla extracted always comes from the planifolia species.The vanillin content of extracted vanilla beans is higher due to the enhanced drying process, which results in a higher concentration of vanillin.

The term “Bourbon” in reference to vanilla is associated with an Appellation d'Origine Protégée that designates vanilla grown in the Indian Ocean, notably on Reunion Island, formerly known as Bourbon Island. This appellation, created in 1964, also applies to vanilla produced in Madagascar, the Comoros, Mayotte and the Seychelles. Bourbon vanilla comes from the Vanilla Planifolia species and is renowned for its superior quality, rich aroma and high vanillin content.
The Bourbon appellation therefore applies to vanilla from Madagascar, Mayotte, Reunion and the Comoros.

It is important to avoid excess humidity to prevent the development of mold. For optimum storage conditions, we recommend storing vanilla beans in waxed or greaseproof paper, or in an airtight glass or metal container, to minimize contact with the air and surrounding odors.
